Tour of the West Coast

The journey begins from the beginning, of course. Our heritage and life long experiences influence us in so many ways. Memories triggered by sounds and aromas send us back with nostalgic recallection.  The featured menu items this month are inspired by the diverse cultures prominant along the West Coast. 

 

February's feature dishes are inspired by the San Francisco Bay Area and Seattle, Washington.  Growing up in California, I used to takes walks around a small island named Belvedere.  There was rosemary, fennel, and other greens growing on the edges of the road. The scents of cypress trees and, of course, the Bay linger in my memories. The Belvedere Fennel Apple salad pays homage to the flavors and aromas that are reminescent of those afternoon adventures.

 

The Kabocha and Farro dish exemplifies the diverse melting pot of the northwest coast. although many think of Kabocha as a Japanese squash,  Portuguese sailors introduced kabocha to Japan in 1541, bringing it with them from Cambodia1.   This comforting vegetarian dish  is smooth and melty sweet from squash with the heartiness of the grain that will satisfy any hunger.
